The Steno Twin diving arm dough mixers are particularly recommended for making dough for Bakery, Pastry and Pizza. The diving arm system replicates that of the human hand and arm movement and is the most efficient way of processing leavened dough. The product obtained is homogenousb and perfectly oxgenated but not subject to excessive overheating and ready for perfect leavening.
