Vegetable Crunchiness Rig

Research carried out at Reading University/Leatherhead Food RA as part of a MAFF funded LINK project has shown that measurements of fracture toughness of fruit and vegetables gives good correlations with the hardness of the produce. Appropriate sample preparation, test system and software analysis allow the measurement of texture characteristics with greater relevance to consumer perception.
